This “modern” version of Puttanesca was popularized in Naples in the early 1960s but the dish has roots dating back much further. Mom’s Mac and Cheese Sauce

4 tablespoons butter or margarine 4 tablespoons all purpose flour 1/2 teaspoon salt 1/2 teaspoon pepper 2.5 cups milk 2 cups shredded cheese In a medium saucepan melt margarine. Stir in flour, salt and pepper. Add the milk and whisk over medium heat until thickened and bubbly. Add cheese and cook another two minutes.
