{"id":61,"date":"2022-10-08T16:56:18","date_gmt":"2022-10-08T20:56:18","guid":{"rendered":"http:\/\/192.168.2.225\/?p=61"},"modified":"2024-10-13T08:50:23","modified_gmt":"2024-10-13T12:50:23","slug":"herb-roasted-turkey","status":"publish","type":"post","link":"http:\/\/www.thehicksons.ca\/?p=61","title":{"rendered":"Herb Roasted Turkey"},"content":{"rendered":"\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>10\u201314 lb turkey, giblets and neck removed, at room temperature for 1 hour\u00a0<\/li>\n\n\n\n<li>1 tsp salt&nbsp;<\/li>\n\n\n\n<li>1 1\/2 tablespoons freshly ground black pepper&nbsp;<\/li>\n\n\n\n<li>2-3 tablespoons unsalted butter, room temperature&nbsp;<\/li>\n\n\n\n<li>1 tsp rosemary&nbsp;<\/li>\n\n\n\n<li>1 tsp sage leaves&nbsp;<\/li>\n\n\n\n<li>1 tsp thyme leaves&nbsp;<\/li>\n\n\n\n<li>1 medium onion, quartered&nbsp;<\/li>\n\n\n\n<li>1 orange, quartered&nbsp;<\/li>\n<\/ul>\n\n\n\n<p><strong>Preparation<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 425\u00b0.<\/li>\n\n\n\n<li>Pat turkey dry with paper towels. Rub bird inside and out with salt and pepper. Place turkey on the rack in the pan.<\/li>\n\n\n\n<li>Using a fork, mix butter, rosemary, sage, and thyme in a small bowl. Rub herb butter over top of turkey and inside cavity.<\/li>\n\n\n\n<li>Place onion and orange inside turkey cavity. Pour 4 cups (approx) water into pan.<\/li>\n\n\n\n<li>Roast turkey, uncovered, for 30 minutes.<\/li>\n\n\n\n<li>Reduce oven temperature to 325\u00b0. Baste turkey with pan juices; add more water if needed to maintain at least 1\/4&#8243; liquid in the bottom of roasting pan.<\/li>\n\n\n\n<li>Continue roasting turkey, basting every 30 minutes and tenting with foil if skin is turning too dark, until an instant-read thermometer inserted into thickest part of the thigh without touching bone registers 165\u00b0 (juices should run clear when thermometer is removed), <strong>about 2.5 \u2013 2.75 hours total<\/strong>.<\/li>\n\n\n\n<li>Transfer turkey to a platter. Tent with foil and let rest for 1 hour before carving.<\/li>\n<\/ol>\n\n\n\n<p>Note:<\/p>\n\n\n\n<p>Regarding cooking time, I&#8217;ve done turkeys ranging from 12 lb to 18 lb with this recipe and while you would expect <em>the larger the turkey, the longer the time<\/em>, that hasn&#8217;t really been my experience. The high heat for 30 minutes dramatically reduces the cooking time versus the traditional method. At 350, an 18 lb turkey would be close to 4 hours.
