Why would you make stuffing outside a turkey?<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>You can double it if you need to. When you are making a turkey dinner for fewer people, the turkey itself often gets smaller but the demand for stuffing doesn&#8217;t seem to. Now you&#8217;re not limited by the bird itself.<\/li>\n\n\n\n<li>It can be made the day before, placed in a casserole dish and microwaved (duh) a few minutes before dinner.<\/li>\n\n\n\n<li>It\u2019s accidentally vegetarian; and<\/li>\n\n\n\n<li>Flavour wise, it\u2019s just as good as \u201creal\u201d stuffing (in fact, my family prefers it).<\/li>\n<\/ul>\n\n\n\n<p>These measurements are mom&#8217;s &#8220;doubling&#8221; amounts that she wrote in the margin of the newspaper clipping. I usually double the recipe below to make enough stuffing to fill a large Dutch oven.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\/3 cup butter or margarine<\/li>\n\n\n\n<li>1 cup finely chopped onion<\/li>\n\n\n\n<li>1 cup chopped celery<\/li>\n\n\n\n<li>8 cups bread cubes (basically a loaf of white bread)<\/li>\n\n\n\n<li>1 tsp salt<\/li>\n\n\n\n<li>2 tsp sage<\/li>\n\n\n\n<li>\u00bc tsp pepper (or to taste)<\/li>\n\n\n\n<li>1\/2 cup chicken broth \/ bouillon (I use McCormick cubes)<\/li>\n<\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\" style=\"list-style-type:1\">\n<li>Add all ingredients except the bread to a casserole dish.<\/li>\n\n\n\n<li>Microwave (covered) until vegetables are tender (I use med-high setting and a few 3-4 min intervals, checking \/ stirring in between.<\/li>\n\n\n\n<li>Tear bread into bite-sized cubes, add to a large mixing bowl (I fill a 2cup measuring cup four times).<\/li>\n\n\n\n<li>When onions\/celery are tender, pour the contents of the casserole dish over the bread and mix thoroughly with a spatula.<\/li>\n\n\n\n<li>Transfer finished stuffing back to the casserole dish and cover.<\/li>\n<\/ol>\n\n\n\n<p>You can refrigerate overnight or serve immediately.
