{"id":227,"date":"2025-11-19T07:26:21","date_gmt":"2025-11-19T12:26:21","guid":{"rendered":"https:\/\/www.thehicksons.ca\/?p=227"},"modified":"2025-11-19T19:38:48","modified_gmt":"2025-11-20T00:38:48","slug":"classic-shepherds-pie-recipe","status":"publish","type":"post","link":"http:\/\/www.thehicksons.ca\/?p=227","title":{"rendered":"Classic Shepherd\u2019s Pie Recipe"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tablespoons olive oil<\/li>\n\n\n\n<li>1 cup chopped yellow onion<\/li>\n\n\n\n<li>1 lb. 90% lean ground beef<\/li>\n\n\n\n<li>2 teaspoons dried parsley leaves<\/li>\n\n\n\n<li>1 teaspoon dried rosemary leaves<\/li>\n\n\n\n<li>1 teaspoon dried thyme leaves<\/li>\n\n\n\n<li>1\/2 teaspoon salt<\/li>\n\n\n\n<li>1\/2 teaspoon ground black pepper<\/li>\n\n\n\n<li>1 tablespoon Worcestershire sauce<\/li>\n\n\n\n<li>2 garlic cloves<\/li>\n\n\n\n<li>2 tablespoons all purpose flour<\/li>\n\n\n\n<li>2 tablespoons tomato paste<\/li>\n\n\n\n<li>1 cup beef broth<\/li>\n\n\n\n<li>1 cup frozen mixed peas &amp; carrots<\/li>\n\n\n\n<li>1\/2 cup frozen corn kernels<\/li>\n\n\n\n<li>1 1\/2 &#8211; 2 lb. russet potatoes<\/li>\n\n\n\n<li>8 tablespoons unsalted butter<\/li>\n\n\n\n<li>1\/3 cup half &amp; half<\/li>\n\n\n\n<li>1\/2 teaspoon garlic powder<\/li>\n\n\n\n<li>1\/2 teaspoon salt<\/li>\n\n\n\n<li>1\/4 teaspoon ground black pepper<\/li>\n\n\n\n<li>1\/4 cup parmesan cheese<\/li>\n<\/ul>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>Instructions:<\/p>\n<\/div><\/div>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook 5 minutes, stirring occasionally.<\/li>\n\n\n\n<li>Add the ground beef (or ground lamb) to the skillet and break it apart with a wooden spoon.<\/li>\n\n\n\n<li>Add the parsley, rosemary, thyme, salt, and and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally.<\/li>\n\n\n\n<li>Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute.<\/li>\n\n\n\n<li>Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain.<\/li>\n\n\n\n<li>Add the broth, frozen peas and carrots, and frozen corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.<\/li>\n\n\n\n<li>Set the meat mixture aside.<\/li>\n\n\n\n<li>Preheat oven to 400 degrees F.<\/li>\n\n\n\n<li>Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.<\/li>\n\n\n\n<li>Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.<\/li>\n\n\n\n<li>Add butter, half &amp; half, garlic powder, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.<\/li>\n\n\n\n<li>Add the parmesan cheese to the potatoes. Stir until well combined.<\/li>\n\n\n\n<li>Assemble the casserole.<\/li>\n\n\n\n<li>Pour the meat mixture into a 9&#215;9 (or 7&#215;11) inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.<\/li>\n\n\n\n<li>If the baking dish looks very full, place it on a rimmed baking sheet so that the filling doesn\u2019t bubble over into your oven. Bake uncovered for 25-30 minutes.
