{"id":225,"date":"2025-11-12T08:16:42","date_gmt":"2025-11-12T13:16:42","guid":{"rendered":"https:\/\/www.thehicksons.ca\/?p=225"},"modified":"2026-02-08T10:45:34","modified_gmt":"2026-02-08T15:45:34","slug":"tortellini-soup","status":"publish","type":"post","link":"http:\/\/www.thehicksons.ca\/?p=225","title":{"rendered":"Tortellini Soup"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 lb. ground mild Italian sausage<\/li>\n\n\n\n<li>1 onion, diced<\/li>\n\n\n\n<li>2 celery stalks, diced<\/li>\n\n\n\n<li>2 large carrots, peeled and diced<\/li>\n\n\n\n<li>3 garlic cloves, minced<\/li>\n\n\n\n<li>1 teaspoon kosher sea salt<\/li>\n\n\n\n<li>1\/2 teaspoon ground black pepper<\/li>\n\n\n\n<li>1 teaspoon Italian seasoning<\/li>\n\n\n\n<li>1 teaspoon fennel seed, crushed or chopped<\/li>\n\n\n\n<li>one 6-oz. can tomato paste<\/li>\n\n\n\n<li>1\/2 cup dry white wine<\/li>\n\n\n\n<li>1\/2 cup all-purpose flour<\/li>\n\n\n\n<li>6\u20137 cups chicken broth<\/li>\n\n\n\n<li>26 oz. refrigerated cheese tortellini<\/li>\n\n\n\n<li>2 cups half and half or heavy cream<\/li>\n\n\n\n<li>1 handful chopped fresh spinach<\/li>\n\n\n\n<li>Parmesan for serving<\/li>\n<\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large stockpot set over medium-high, cook the sausage, breaking up into little pieces. When sausage is mostly browned, add onion, celery and carrot, saut\u00e9 until the vegetables are soft.<\/li>\n\n\n\n<li>Add the garlic, spices, and tomato paste; saut\u00e9 for an additional 3-5 minutes, or until fragrant, stirring occasionally to prevent it from burning.<\/li>\n\n\n\n<li>Add wine and let it cook out for a few minutes. Stir the flour in and cook for 1 minute. Gradually add in the chicken broth, stir to combine. Continue cooking until the mixture reaches a simmer, then reduce heat to low and simmer for 15 minutes.<\/li>\n\n\n\n<li>Add the tortellini, then bring it to a low simmer. Cook until tortellini is al dente, per package directions, then add cream and spinach and return to a low simmer.
