{"id":209,"date":"2025-06-08T11:19:42","date_gmt":"2025-06-08T15:19:42","guid":{"rendered":"https:\/\/www.thehicksons.ca\/?p=209"},"modified":"2025-06-08T11:19:42","modified_gmt":"2025-06-08T15:19:42","slug":"baked-beans","status":"publish","type":"post","link":"http:\/\/www.thehicksons.ca\/?p=209","title":{"rendered":"Baked Beans"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\" id=\"ingredients\">Ingredients:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 lb dried navy beans<\/li>\n\n\n\n<li><sup>1<\/sup>\u2044<sub>2<\/sub> cup chopped onion<\/li>\n\n\n\n<li><sup>1<\/sup>\u2044<sub>2<\/sub> cup molasses<\/li>\n\n\n\n<li>1 teaspoon dry mustard<\/li>\n\n\n\n<li><sup>1<\/sup>\u2044<sub>4<\/sub> cup brown sugar, packed<\/li>\n\n\n\n<li><sup>1<\/sup>\u2044<sub>2<\/sub> cup maple syrup<\/li>\n\n\n\n<li>1 tablespoon ketchup<\/li>\n\n\n\n<li>2 teaspoons prepared yellow mustard<\/li>\n\n\n\n<li><sup>1<\/sup>\u2044<sub>2<\/sub> cup orange juice<\/li>\n\n\n\n<li>1 teaspoon salt<\/li>\n\n\n\n<li><sup>1<\/sup>\u2044<sub>4<\/sub> lb bacon<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"directions\">Directions:<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Rinse beans and pick them over. Put beans in a large bowl with three times as much water as beans. Cover and refrigerate overnight.<\/li>\n\n\n\n<li>Drain beans. Combine beans and chopped onion in a large saucepan. Add water to cover them and heat to boiling. Cover and let simmer about 30 minutes. Drain liquid into a small bowl to reserve for sauce and for cooking.<\/li>\n\n\n\n<li>Dice and saute bacon in a small pan until well done but not crispy.<\/li>\n\n\n\n<li>Add orange juice, molasses, maple syrup, ketchup, and prepared mustard to a mixing bowl. Then add the brown sugar, stirring to dissolve. Lastly, add the dry mustard, salt and a half cup of bean liquid.<\/li>\n\n\n\n<li>In a 3-quart bean crock or covered baking dish add the beans and bacon. Pour the sauce mixture over beans, mix gently and add just enough reserved bean liquid to cover them.<\/li>\n\n\n\n<li>Bake, covered, at 300 degrees for 4 hours, checking on the hour. If beans seem too dry, add a little of the remaining bean liquid.
