{"id":170,"date":"2024-04-18T19:00:08","date_gmt":"2024-04-18T23:00:08","guid":{"rendered":"https:\/\/www.thehicksons.ca\/?p=170"},"modified":"2024-04-18T19:01:31","modified_gmt":"2024-04-18T23:01:31","slug":"gumbo","status":"publish","type":"post","link":"http:\/\/www.thehicksons.ca\/?p=170","title":{"rendered":"Gumbo"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 medium onion, diced<\/li>\n\n\n\n<li>2 to 3 stalks celery, diced<\/li>\n\n\n\n<li>1 green pepper, diced<\/li>\n\n\n\n<li>3 to 4 cloves garlic, minced<\/li>\n\n\n\n<li>5 to 7 large boneless, skinless chicken thighs (pan seared or BBQed)<\/li>\n\n\n\n<li>.5 lb Kielbasa, andouille or smoked sausage cut into bite-sized pieces<\/li>\n\n\n\n<li>.5 lb shrimp (optional)<\/li>\n\n\n\n<li>4 C Beef stock<\/li>\n\n\n\n<li>Half to 2\/3rds of a \u201cdomestic\u201d beer<\/li>\n\n\n\n<li>3 tbs Creole Spice<\/li>\n\n\n\n<li>Ground pepper to taste<\/li>\n<\/ul>\n\n\n\n<p><strong>Creole Spice<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 1\/2 tablespoons paprika<\/li>\n\n\n\n<li>2 tablespoons salt<\/li>\n\n\n\n<li>2 tablespoons garlic powder<\/li>\n\n\n\n<li>1 tablespoon black pepper<\/li>\n\n\n\n<li>1 tablespoon onion powder<\/li>\n\n\n\n<li>1 tablespoon cayenne pepper<\/li>\n\n\n\n<li>1 tablespoon dried oregano<\/li>\n\n\n\n<li>1 tablespoon dried thyme<\/li>\n<\/ul>\n\n\n\n<p><strong>Roux<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>.75 C vegetable oil<\/li>\n\n\n\n<li>.33 C All Purpose flour<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Add oil to a large Dutch oven over medium heat. Stir in flour to make a roux. The more the roux darkens, the more you need to whisk it. As it approaches brown (like Hersey chocolate) you should be whisking it steadily. You are looking for it to approach the colour of Hershey\u2019s chocolate but don\u2019t burn it or you\u2019ll need to start over!<\/li>\n\n\n\n<li>Reduce heat to a simmer and add the trinity (onion \/ green pepper \/ celery), then garlic, saut\u00e9 for 2 to 3 mins.<\/li>\n\n\n\n<li>Add beef stock, sausage, chicken thighs, creole spice, beer and a generous amount of black pepper.<\/li>\n\n\n\n<li>If everyone loves shrimp, add them now. If some don\u2019t like them, you can saut\u00e9 them in a separate sauce pan with a bit of broth closer to serving time. This way people can add them to their individual serving (this is what we do in our house).
